Pineapple Layer Bars
Ingredients
1/4 cup soft butter
1 cup brown sugar
1 cup sifted flour
1/2 teaspoon salt
1/2 cup coconut
3/4 cup sugar
1/4 teaspoon salt
1- 9 ounce can crushed pineapple
1 tablespoon butter
1 tablespoon lemon juice
3 tablespoons cornstarch
Instructions
Cream together butter and brown sugar.
Add flour, salt and coconut.
Mix well with fingers until crumbly.
Press 1/2 of the mixture firmly into a buttered and floured 9x9x2 pan.
For the filling:
Combine sugar, cornstarch, salt and pineapple in a saucepan.
Cook, stirring constantly until mixture thickens and becomes clear, about 5 minutes.
Remove from heat and stir in butter and lemon juice.
Spread pineapple filling over crumb mixture, pressing down firmly.
Bake at 350° for 35 minutes, until golden brown.
Cut into 24 bars and store in a tightly covered container.
