Butterscotch Brownies

Ingredients

  • 1/4 cup softened butter
  • 3/4 cup flour
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts
  • 1 cup brown sugar
  • 1 egg
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla

Instructions

  • Add all the ingredients into a mixing bow and mix well.
  • Spread into a greased 8x8x2  pan and bake for 25 minutes at 350°.
  • Do not overtake.
  • Cut into bars while warm.

Mint Magic Brownies

Ingredients

  • 1 Duncan Hines Mint Chocolate Brownie Mix
  • 1/3 cup vegetable oil
  • 1/3 cup water
  • 2 eggs
  • 2- 8 ounce packages cream cheese, softened
  • 1/2 cup powdered sugar, sifted
  • 1-12 ounce package chocolate chips
  • 1/2 cup peppermint stick pieces

Instructions

  • Preheat oven to 350°.
  • Grease bottom only of a 9x9x2 pan.
  • In a large bowl, combine brownie mix, oil, water, and eggs.
  • Stir with a large spoon, for 1 minute.
  • Spread into prepared pan.
  • Bake for 40 minutes.
  • Cool completely.
  • In a medium bowl, combine cream cheese and powdered sugar.
  • Beat on high speed for 3 minutes.
  • Spread cream cheese topping over cooled brownies.
  • Sprinkle chocolate chips on top.
  • Dot with peppermint stick.
  • Store in an airtight container.

Cookie Squares with Baked Frosting

Ingredients

  • Dough:
  • 1/2 cup shortening
  • 1 cup sugar
  • 2 well beaten eggs
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon salt 
  • 1 1/2 cups flour
  • 1 teaspoon baking powder
  • Frosting:
  • 1 cup brown sugar
  • 1 egg white beaten stiff
  • 1/2 teaspoon vanilla
  •  1 cup chopped walnuts

Instructions

  • Dough
  • Cream together shortening and sugar.
  • Add eggs; then add vanilla, salt, flour and baking powder.
  • Dough:
  • Spread out 1/4 ” thick on greased cookie sheet.
  • Frosting:
  • Beat an egg white until stiff.
  • Fold in brown sugar and vanilla.
  • Spread over cookie batter and sprinkle with chopped nuts.
  • Bake 20 minutes at 325°.
  • Cut into squares while warm.

Crème De Menthe Squares

Ingredients

  • 1 1/4 cups softened butter
  • 1/2 cup unsweetened cocoa
  • 3 1/2 cups sifted powdered sugar
  • 1 egg, beaten 
  • 1 teaspoon vanilla
  • 2 cups graham cracker crumbs
  • 1/3 cup green crème de menthe
  • 1 1/2 cups semi-sweet chocolate chips

Instructions

  • Bottom Layer:
  • Melt 1/2 cup butter with cocoa.
  • Heat and stir until blended.
  • Remove from heat.
  • Add 1/2 cup sugar, egg, vanilla.
  • Stir into crumbs.
  • Mix well.
  • Press into the bottom of ungreased 13x9x2 baking pan.
  • Middle Layer:
  • Melt 1/2 cup butter.
  • In a mixing bowl combine the butter with créme de menthe.
  • Beat in remaining sugar (3 cups) at a low mixer speed.
  • Spread over the chocolate layer and chill for 1 hour.
  • Top Layer:
  • Melt 1/4 cup butter with chocolate chips over low heat until smooth.
  • Spread over mint layer.
  • Chill 1 to 2 hours.
  • Cut into small pieces.
  • Store in refrigerator.

Apple-Oatmeal Chews

Ingredients

  • 1 cup flour
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon allspice
  • 1 teaspoon grated orange rind
  • 1 1/3 cups oatmeal
  • 1/2 cup melted butter
  • 2 cups very thinly sliced apples
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon 
  • 1/8 teaspoon mace
  • 2/3 cups dark brown sugar
  • 1 egg
  • 1/4 teaspoon vanilla
  • powdered sugar for topping

Instructions

  • Sift flour, soda, salt and spices into a bowl.  
  • Add all the remaining ingredients except the powdered sugar and apples.
  • Knead well with hands.
  • Pat 1/2 of the dough firmly into a greased 9x9x2 pan.
  • Arrange apples evenly on top.
  • Roll remaining dough between two sheets of waxed paper into a 9″ square.
  • Press firmly onto apples, piecing as needed to cover the apples.
  • Bake in a 350° oven for 30 minutes until cookie top begins to pull from the sides of the pan.
  • Cool until warm to the touch, then press top cookie layer into apples.
  • Dust top lightly with powdered sugar.
  • Cool to room temperature and cut into squares.

Pineapple Layer Bars

Ingredients

  • 1/4 cup soft butter
  • 1 cup brown sugar
  • 1 cup sifted flour
  • 1/2 teaspoon salt
  • 1/2 cup coconut
  • 3/4 cup sugar
  • 1/4 teaspoon salt
  • 1- 9 ounce can crushed pineapple
  • 1 tablespoon butter
  • 1 tablespoon lemon juice
  • 3 tablespoons cornstarch

Instructions

  • Cream together butter and brown sugar.
  • Add flour, salt and coconut.
  • Mix well with fingers until crumbly.
  • Press 1/2 of the mixture firmly into a buttered and floured 9x9x2 pan.
  • For the filling:
  • Combine sugar, cornstarch, salt and pineapple in a saucepan.
  • Cook, stirring constantly until mixture thickens and becomes clear, about 5 minutes.
  • Remove from heat and stir in butter and lemon juice.
  • Spread pineapple filling over crumb mixture, pressing down firmly.
  • Bake at 350° for 35 minutes, until golden brown.
  • Cut into 24 bars and store in a tightly covered container.

  • 1/2 cup softened butter
  • 1 cup flour
  • 1/4 cup powdered sugar
  • 2 eggs
  • 1 cup sugar
  • 3 tablespoons lemon juice
  • 2 tablespoons flour
  • 1/2 teaspoon baking powder

Instructions

  • Cream together the butter, 1 cup flour and powdered sugar.
  • Press into an 8″ pan.
  • Bake for 20 minutes at 350° until golden brown.
  • Beat together the, eggs, sugar, lemon juice, 2 tablespoons flour, and baking powder.
  • Pour over crust and bake at 350° for 30 minutes.
  • Can sprinkle powdered sugar on top for an extra touch.

  • 1 cup softened butter
  • 2 cups flour
  • 1/2 cup powdered sugar
  • 1/4 teaspoon salt

Instructions

  • Blend the above ingredients together.
  • Pat into ungreased 9×9 pan.  Pierce with fork through every 1/2″.
  • Bake for 25-30 minutes at 350°.
  • Cut into squares.

  • 2 sticks softened peanut butter
  • 3 cups powdered sugar
  • 1 cup chunky peanut butter
  • 1 1/2 cups graham cracker crumbs
  • 2 cups semi-sweet chocolate chips

Instructions

  • Mix together the butter, sugar, peanut butter and graham cracker crumbs.
  • Put in the bottom of (ungreased) 13x9x2 pan.
  • Melt chocolate chips and pour over the top.
  • Cut into squares.

Heavenly Oatmeal Bars

Ingredients

  • 2/3 cup softened butter
  • 1 cup brown sugar
  • 4 cups quick-cooking oatmeal
  • 3 teaspoons vanilla
  • 1/2 cup light corn syrup
  • 6 ounces chocolate chips
  • 2/3 cup crunchy peanut butter

Instructions

  • Cream the butter and sugar.
  • Add oatmeal, vanilla, and corn syrup.
  • Mix well.
  • Pat dough into 9×13 cookie sheet.
  • Bake for 15-16 minutes only, at 350°.
  • While baking, melt chocolate chips with the peanut butter.
  • Spread on dough after cooling slightly.
  • Cut into bars.
